If you and your family have recently made the switch to vegetarian eating, you may be having trouble coming up with a variety of recipes. Despite the health benefits of a meat-free diet, it can get boring eating the same old garden veggie patties every day. Beans and Rice With Cheese is fast and easy to cook. The ingredients are cheap, and you can stretch them so they will feed multiple people or last for multiple meals.

When cooking beans and rice, you have several choices. You can choose between white rice and brown rice, and canned beans or dry beans. You also have the choice of what kind of beans to use. Some of my personal favorites are black beans, small red beans, and blackeye peas. You should start your rice first. Then, in another pot, combine an onion, a few minced garlic cloves, and some diced carrots. Saute those ingredients together, and then add your beans. Bring the mixture to a boil, and cook on low until the carrots are as soft as you want them and the flavors have combined. Serve the beans over the rice, and add shredded cheese, which will melt on top.

Marinated Baked Tofu is fast and easy, too. Another plus with this recipe is that it does not create a lot of dishes.

Tofu can be bland if it is prepared improperly, but it all depends on the seasoning. It is usually best if marinated. Extra firm tofu works best for baking. To make a marinade, combine 1/3 cup soy sauce, water, minced fresh ginger and minced fresh garlic, and 1 and 1/4 tablespoons of sesame oil. Cut the tofu into slices, and let it sit for at least thirty minutes in the marinade. Preheat the oven to 425 degrees, and lightly grease a cookie sheet. When the tofu is finished marinating, place it on the cookie sheet and sprinkle sesame seeds on top. Bake for thirty minutes, and then turn the cookie sheet around. Drizzle with extra marinade if necessary, and bake for another fifteen minutes.

Dressing Up Your Garden Veggie Patties is one way to get kids excited about them. Another idea is to add a fun side dish, like veggies and dip or baked potatoes.

When you only ever serve veggie burgers with lettuce and tomato, or worse yet with only ketchup and mustard, they can quickly become boring. However, there are plenty of ways to dress them up. Lots of companies make a variety of flavors, including pizza flavor, spicy black bean, and even masala. Switching up the toppings is also helpful. You can try different things, like grilled onions and mushrooms, veggie bacon, or vegan cheese.
